Fishing Method
Akamutsu is caught by trawling (scraping the bottom of the ocean floor with a net). This fishing is usually completed within a day, and the short fishing time helps to maintain the freshness of the fish.

Purchasing and Processing
After being purchased at auction at 10PM, the fish are transported to the Akamutsu processing plant at 7AM the next morning. At the processing plant, the guts and gills are removed, and the fish are vacuum-packed and flash-frozen.

Storage
The quick-frozen Akamutsu is transported to Incheon, where it is stored in the frozen warehouse before being exported.
